FAR Distilling is what happens when five generations of Hunter winegrowing meet contemporary cold distillation. The vineyard and the distillery share an address: Field of Mars Block 1 Shiraz ripens beside the stills at 989 Hermitage Road, next door to Keith Tulloch Wine, while Latara’s dark cracking clay grows the Semillon for our Semillon Slammer. Inside, a traditional copper pot still works alongside a vacuum cold still: heat for the botanicals that want it, cold for the ones it would ruin. Behind both sits a library of more than 100 catalogued distillates. Wine country roots, distilled.
