This gin celebrates the lore of the Hunter Valley harvest, celebrating the first crush of the season with fresh juice straight from the press with our grape-based spirit.

Vineyard: Whilst many Hunter Valley Semillon vineyards are established on light sandy alluvial soils, the Latara vineyard sits upon dark cracking clay soils facing East-West. This makes for a powerful expression of Semillon, and we have been lucky to have the ability to capture a small batch of freshly crushed fruit straight from the 2025 harvest. Simply racking it off with no fermentation process.

Tasting Notes: With aromatic notes of ripe Hunter Semillon fruit, this gin delivers more than the classic lime juice and lemon, with extra aromatic dimensions of fresh-cut apple showing the flair and expression of the Latara vineyard site. Elegant perfumes of lemon-Myrtle and verbena simmer with fresh energy across the top. Grapefruit and apple-like flavours amplify throughout the palate, with a delicious tang that recedes with mouthwatering finesse.
